“The food here is a nice combination of two coastal port towns,” Costa advised The California Post.

The trout brings these influences collectively, starting with a blackening seasoning that includes garlic, paprika, cayenne, fennel seed, coriander and other spices.

Costa then provides toasted polenta grains, giving the fish a flavorful crust with a delicate crunch.

The trout is flippantly brushed with mustard, pressed into the seasoning combination and cooked until the exterior develops a golden crust while the fish stays tender.

Costa believes the dish’s reputation comes from elevating an often-overlooked American staple.

“I think trout is relatively underused,” he said, noting that it lacks the same recognition as salmon, cod or halibut.

The restaurant occupies the former chapel of Hotel Lucile, a 25-room boutique lodge that opened in September following an in depth restoration.

For Costa, the setting provides another layer to the eating expertise, remodeling a historic neighborhood gathering place into a vacation spot for meals lovers.
